    Learn how to make a Strawberry Fruit Sando, the popular Japanese fruit sandwich made with soft bread, sweet cream, and fresh strawberries, using my friendly beginner method.

    Known in Japan as ichigo sando, this beautiful strawberry sandwich is sold in bakeries, cafés, food stalls, and even convenience stores called konbini. Made with fluffy bread, creamy filling, and juicy strawberries, fruit sando is light, sweet, and perfect for breakfast, brunch, or dessert.

    If you love pretty fruit-forward treats, this Strawberry Fruit Sando is every bit as lovely as my Yogurt Parfait Shooters, and just as easy to make at home.

    What is Fruit Sando?

    Fruit sando is a popular Japanese fruit sandwich made with soft white bread, lightly sweetened whipped cream, and fresh fruit. Sold in bakeries, cafés, food stalls, and even Japanese convenience stores called konbini, fruit sando is loved for its beautiful presentation and lightly sweet flavor.

    I first tried fruit sando while visiting Japan and immediately fell in love with the soft bread, sweet cream, and beautiful presentation.

    The most popular version is ichigo sando, a strawberry fruit sandwich made with bright, juicy strawberries pressed into fluffy cream and soft bread. Like a tea sandwich, the crusts are trimmed. Then the sandwich is carefully cut to reveal a beautiful fruit pattern inside.

    Although strawberries are the classic choice, fruit sando is also commonly made with grapes, mandarin oranges, and kiwi.

    Ingredient Notes

    Here's everything you'll need to make a Strawberry Fruit Sando. Please see the recipe card for the exact quantities.

    • Fresh Strawberries - Choose small, fragrant strawberries.
    • Whipped Cream Cheese - Cream cheese will stabilize the whipped cream, allowing it to hold its shape and not weep. If you don't want to use cream cheese, see my post on Homemade Whipped Cream for more options to stabilize the cream.
    • Heavy Cream - Use only heavy cream, or heavy "whipping cream". Do not substitute "light cream", "single cream", or coffee creamer.
    • Confectioner's Sugar - A very small amount of confectioner's sugar sweetens the whipped cream just a touch. You can use more or less to your taste.
    • Vanilla Extract - (Optional) I use vanilla to offset the slight cream cheese flavor. But you can omit it.
    • White Sandwich Bread - White sandwich bread is best, but you can use butter sandwich bread if white is not available. The very best bread is a white Pullman loaf, which has less to trim away since it does not have a rounded top.

    Traditional vs Easy Method

    A Beginner-Friendly Way to Make Fruit Sando

    Traditional fruit sando sandwiches are assembled with whole fruit hidden inside and then sliced to reveal a decorative pattern. While beautiful, getting the fruit perfectly aligned can take practice.

    For this easier home-cook version, the strawberries are pressed into the cream after slicing. This method makes assembly simpler, helps the strawberries stay fresh-looking, and still creates the beautiful strawberry-pattern a fruit sando is known for.

    How to Make Strawberry Sando

    Process Photo 1 - Prepare strawberries. Hull, slice in half, and chop some.
    1. Prep the Strawberries. Hull the strawberries and slice them in half. Finely chop 2 berries for the filling.

    1. Make the Filling. Beat together cream cheese, heavy cream, confectioners sugar, and vanilla to make stabilized whipped cream and fold in the chopped strawberries.

    1. Fill Sandwiches: Spread the filling on the bread and assemble the sandwiches. Wrap in plastic wrap and chill for 2 hours.

    1. Trim, Cut & Garnish: Using a sharp knife, trim away the crusts, and cut each sandwich diagonally. Arrange 3 strawberry halves along the long diagonal, cut-side out, so every bite has fruit, and the sandwich looks beautiful when served.

    My Top Tips

    ♡ For the prettiest sandwiches, spread the filling on the bread, stack, and wrap tightly in plastic wrap. Chill for at least 2 hours before trimming, slicing, and adding the strawberry halves.

    What is fruit sando?

    Fruit sando is a popular Japanese fruit sandwich made with soft milk bread, lightly sweetened whipped cream or cream filling, and fresh fruit. The sandwiches are often made with strawberries, grapes, kiwi, or mandarin oranges and are cut to showcase a beautiful fruit pattern inside.

    Why do you chill fruit sando before slicing?

    Chilling helps the cream filling firm up so the sandwich holds its shape and slices cleanly. A well-chilled fruit sando also creates the neat fruit pattern seen in Japanese bakeries.

    What bread is best for fruit sando?

    Soft white sandwich bread or Japanese milk bread works best for fruit sando. The bread should be soft and fluffy with a fine crumb so it presses gently around the fruit and cream filling.

    Can I make fruit sando without cream cheese?

    Yes. Traditional fruit sando is often made with whipped cream alone. However, adding a small amount of cream cheese helps stabilize the filling and makes the sandwiches easier for beginners.

    Can I use frozen strawberries?

    Fresh strawberries are best for fruit sando. Frozen berries release too much moisture when thawed, making the filling watery.

    Make-Ahead & Storage

    • Make-Ahead: Fruit sando is actually best made several hours ahead or chilled overnight so the filling firms and the sandwich slices neatly.
    • Storage: Fruit sando is best eaten within 24 hours. Because it contains fresh fruit and cream, leftovers should be stored in an airtight container or wrapped tightly in plastic wrap in the refrigerator and enjoyed the next day. Do not freeze.

    Ingredients
     

    • 11 Small Fresh Strawberries
    • ⅓ Cup Whipped Cream Cheese
    • 1 Cup Heavy Cream
    • 2 Teaspoons Confectioners Sugar
    • ¼ Teaspoon Vanilla Extract
    • 6 Slices White Sandwich Bread

    Instructions
     

    • Prepare Strawberries. Hull the strawberries. Cut 9 strawberries in half and finely dice the remaining 2 strawberries for the filling.
      11 Small Fresh Strawberries
    • Make Sandwich Filling. In a small bowl, beat together the cream cheese, heavy cream, confectioners' sugar, and vanilla extract with a hand mixer until thick, fluffy, and stiff peaks form. Gently fold in the diced strawberries.
      ⅓ Cup Whipped Cream Cheese, 1 Cup Heavy Cream, 2 Teaspoons Confectioners Sugar, ¼ Teaspoon Vanilla Extract
    • Assemble Sandwiches. Spread the strawberry filling generously on 3 slices of bread and top with the remaining slices to make sandwiches. Wrap tightly in plastic wrap and refrigerate for at least 2 hours to help the filling firm up.
      6 Slices White Sandwich Bread
    • Slice and Garnish. Using a sharp knife, trim away the crusts and cut each sandwich diagonally in half. Press 3 strawberry halves into the cream filling along the cut diagonal edge of each sandwich half, placing the cut side facing outward for a pretty presentation. Serve immediately and enjoy!

    Notes

    For the Prettiest Sandwiches:
    Chill the wrapped sandwiches for at least 2 hours before trimming and decorating. A firm filling makes assembly easier and helps the strawberries stay neatly in place.
    Bread Tip:
    Soft white sandwich bread or Japanese milk bread works best for fruit sando.
