Years ago, my grandmother ordered "strawberry cream" at a favorite restaurant. None of us knew exactly what she meant, and we assumed she wanted strawberry ice cream.
Years later, I realized she was likely remembering a dessert much like Strawberry Fool-a simple combination of sweet strawberries and cream that feels elegant while being incredibly easy to make.
This version folds juicy strawberries into vanilla whipped cream for a dessert that tastes rich and creamy, but lighter and less sweet than ice cream.
The beauty of Strawberry Fool is its simplicity. It comes together quickly and can easily be adjusted to your taste if you prefer a sweeter dessert.
But like a perfect summer day, it does not last and is meant to be made and enjoyed within hours.
Strawberry Fool vs. Strawberries and Cream: What's the Difference?
While both desserts feature fresh strawberries and cream, Strawberry Fool is different because the fruit is folded into whipped cream instead of served alongside it. This creates a light, airy dessert with strawberry flavor in every bite.

Ingredient Notes

Here's what you need to make Strawberry Fool:
- Fresh Strawberries - Use the freshest, ripest strawberries for this dessert. The sweeter and riper the berries, the better your fool will taste. If strawberries are slightly tart, add a touch more sugar after macerating.
- Sugar - White granulated sugar works quickly to macerate and sweeten the strawberries.
- Heavy Cream - Heavy cream (not half-and-half or milk) is essential for creating stiff peaks and a thick, fluffy texture.
- Vanilla Extract - I like just a bit of vanilla in the whipped cream, but this is not essential and totally optional.
Optional Garnishes:
- Sprigs of Fresh Mint Leaves - Fresh mint makes a beautiful garnish.
- Halved Small Strawberries - A halved strawberry or small whole strawberry signals that this fool is strawberry flavored!

Substitutions & Variations
- Use Other Berries. You can also use raspberries, blueberries, blackberries, and stone fruits like peaches and nectarines.
- Omit the Vanilla Extract. Vanilla extract is not required but it does make whipped cream tastier and is an excellent backdrop for fresh fruit.
- Add Lemon. If you accidentally make the fruit too sweet with sugar, add a squeeze of fresh lemon juice to temper the sweetness.
How to Make Strawberry Fool

Step 1 - Prepare Strawberries. Wash and hull the strawberries, then slice them into a medium bowl. Add sugar to the strawberries and stir well. Let the berries sit for at least 20 minutes or until well-macerated and juicy.


Step 2 - Puree Strawberries. Put one-half of the berries into a blender or food processor and blend until smooth. Pour the blended berries over the remaining berries and stir.

Step 3 - Make Stiff Whipped Cream. In a large-sized bowl beat the heavy cream with the vanilla extract until stiff peaks form.


Step 4 - Fold and Combine. Gently fold the strawberries into the whipped cream.

Step 5 - Serve & Enjoy. Spoon into serving dishes and serve immediately... or chill for up to 2 hours.
I generally save a few small strawberries, cut in half, for a pretty garnish with a small sprig of fresh mint leaves.
My Top Tips
♡ Heavy cream can splatter when being whipped, so a deep bowl works best.
♡ If you refrigerate the bowl, beaters, and heavy cream, the cream will whip up faster and fluffier.
Equipment
I used a small food processor to blend the berries into a purée. But if you do not have a food processor or blender, you can mash the strawberries with a fork or potato masher and still have a super delicious dessert.
Strawberry Fool FAQs
Because this dessert contains dairy, you can't successfully freeze it and have the same texture.
Fresh strawberries are best for Strawberry Fool because they provide the brightest flavor and best texture. Frozen berries can work in a pinch but tend to release extra liquid and create a softer dessert.
Make-Ahead & Storage
- Make-Ahead: You can prepare the strawberries and whip the cream ahead of time and store them separately in the refrigerator for up to 4 hours. When ready to serve, simply fold the berry mixture into the whipped cream and spoon it into dessert glasses.
- Storage: This Strawberry Fool must be served and eaten within a couple of hours of making it.
