    What Is a Champagne Cocktail?

    Aside from containing champagne, the one thing that is essential for a champagne cocktail is a sugar cube soaked in bitters at the bottom of the glass. This not only flavors the cocktail but also creates a point where the bubbles rise through the cocktail.

    A cocktail containing champagne and only a liqueur is typically called a "Royale."

    About This Recipe

    This Rosy Champagne Cocktail was inspired by my Grandmother. Honestly, it was. She loved cherry everything and especially loved her cocktails sweet. So, just like my Cherry Pineapple Fluff dessert, this cocktail is in memory of her.

    The classic champagne cocktail contains a sugar cube soaked with bitters, a small amount of cognac or brandy, and, of course, champagne. For this Rosy Champagne cocktail I've substituted maraschino cherry juice (Grandma's favorite for cocktails!) for the brandy and orange bitters for the traditional Agnostura bitters.

    This bubbly cocktail is totally customizable and I've given some simple options for making it sweeter or less sweet.

    It's perfect for special occasions, because champagne makes everyday special and what's more fun than bubbles?

    So, let's have bubbles!

    Ingredient Notes

    Here's what you need for a Rosy Champagne Cocktail:

    • Sugar Cube - You need a sugar cube to sweeten the cocktail and as a mechanism to give a lovely stream of bubbles up through the cocktail.
    • Orange Bitters - I like the profile of orange and cherry, so I'm using orange bitters in this cocktail.
    • Maraschino Cherry Juice - Sweet and tasting like cherries, this gives a rosy glow to the cocktail and delicious flavor.
    • Champagne - Look for a champagne or sparkling wine that is "dry", meaning that it is not sweet. Labels may say Blanc de Blanc, Brut, or Extra Brut. Avoid sec and demi-sec, which are sweet wines. For bubbles in the wine, it should say sparkling or Méthode Champenoise (Champagne Method).

    Optional Garnish:

    Orange Peel with a Maraschino Cherry. Jean-Félix at "Truffles on the Rocks" has very clear instructions for stunning orange peel garnishes.

    • Use a Sparkling Wine. Instead of champagne, consider using less expensive sparkling wines like Prosecco and Cava.

    • Use Your Favorite Bitters. I like orange bitters for this Rosy Champagne Cocktail, which complements the cherry flavor of the maraschino juice. But you can use your favorite bitters in this cocktail.

    Step-by-Step Instructions to Make a Rosy Champagne Cocktail

    Process Photo 1 - A sugar cube soaked with bitters is place in a champagne glass.
    1. Soaked Sugar Cube. Shake two dashes of bitters onto a sugar cube. Place the sugar cube into a chilled 6-ounce champagne glass.

    1. Maraschino Juice. Add maraschino cherry juice.

    ♡ Don't skip the sugar cube. This is what makes a lovely stream of bubbles flow up through the cocktail.

    Each brand and type of champagne and sparkling wines is unique and you may wish to adjust the flavor of this cocktail depending on the wine you are using. You can easily adjust the flavor of this cocktail to make it more or less sweet with these options.

    • Less Sweet - To make this champagne cocktail less sweet, add more bitters to the sugar cube and/or add less maraschino cherry juice.
    • More Sweet - Use more maraschino cherry juice to make it more sweet. Do not omit the bitters, as they add depth to the flavor of this cocktail.

    Mocktail Options

    Since the only alcohol in this cocktail is the sparkling wine, you can swap it out with any of the following for a delicious, bubbly mocktail:

    • Lemon-Lime Soda. Good choices are Sprite, 7-Up, and Starry.
    • Ginger-Ale.
    • Flavored Selzer. Lime or orange will go very well with the cherry flavor.
