    Here's what you need:

    • Heavy Cream - Heavy cream makes this creamer indulgent and worth the work of making it. Make sure you use heavy cream and not table cream or light cream.
    • Whole Milk - Whole milk has at least 4% cream and has a richer flavor. Do not substitute 2% or skim milk.
    • Light Brown Sugar - Light brown sugar brings sweetness to the creamer with caramel overtones that are delicious. You can use more or less to customize the creamer to your taste.
    • Vanilla Extract - Vanilla is the perfect backdrop flavor that supports and enhances the sweet baking spices in pumpkin spice.
    • Libby's Canned Pumpkin - Use only 100% real packed pumpkin. Pumpkin has pectin that acts as a thickening agent and emulsifier, which is why this creamer doesn't separate after it has been cooked. Do not substitute pumpkin pie mix or pumpkin purees that contain other ingredients.
    • Pumpkin Spice - I like to make my homemade pumpkin spice blend. But you can use your favorite.

    Step-by-Step Instructions

    Process Photo 1a - Canned pumpkin, light brown sugar, pumpkin spice, vanilla extract, heavy cream, and whole milk are put into a large saucepan.

    Simmer. In a 1-quart saucepan whisk together all ingredients. Bring to a boil over medium-high heat. Reduce heat and simmer for 3 minutes.

    Cool. Remove from heat and let cool for at least 5 minutes before using. It is normal for a skin to form on the top as the creamer cools. Whisk briskly to remix it back into the creamer.

    Storage. Store leftover creamer in an airtight jar in the refrigerator for up to 1 week. This cooked creamer does not separate, but if you change the proportions of the ingredients, it may. If the creamer does separate, shake it well before using.

    ♡ Letting the ingredients simmer for just a few minutes makes a smooth creamer and helps develop the flavors.

    Substitutions & Variations

    • Substitute Dark Brown Sugar. If you don't have light brown sugar you can use dark brown sugar.
    • Substitute Maple Syrup. You can use maple syrup to sweeten this creamer. Use ¼ cup and omit the brown sugar.
    • Adjust the Sweetness. I like my creamer with just a touch of sweetness. But, if you like a sweeter creamer, add more light brown sugar.
    • Make it Thinner. This thick, rich tasting creamer can be spooned or poured. If you prefer a thinner creamer, you can add ½ cup of half and half or an additional ½ cup of milk.
