    Here's what you need to make Baked Chicken Leg Quarters:

    • Chicken Leg Quarters - This is a hearty cut of chicken typically sold in packages of 4. They are often very economical, and an entire chicken leg quarter can be divided into the drumstick and the thigh if you need smaller portions. You can also substitute whole chicken legs (thigh-drumstick pieces without the back portion), chicken thighs, or chicken legs in this recipe. 

    For the Spice Rub:

    • Paprika - Paprika is made from all types of dried ground peppers that vary in heat and it comes in several varieties that include hot, smoked, and sweet. Use sweet paprika for a mild flavor and beautiful color.
    • Onion Powder & Garlic Powder -  Adds savory depth to the seasoning blend.
    • Dark Brown Sugar - A small amount balances the spices and helps browning.
    • Dried Oregano - Adds warm herbal flavor that pairs beautifully with chicken.
    • Fine Sea Salt - Salt makes everything taste better. I use fine sea salt, but you can use any finely textured salt.

    Substitutions & Variations

    • Substitute Italian Seasoning. Instead of dried oregano, you can use your favorite dried Italian seasoning blend.
    • Omit the Brown Sugar. If you are watching your sugar consumption, you can omit the brown sugar.
    • Add Black Pepper. I prefer not to add black pepper to dishes as a seasoning. But if you enjoy the flavor of black pepper, you can add ½ teaspoon to the spice mixture.
    • Add Red Pepper Flakes. If you like a little heat, add red pepper flakes to the spices. Be sparing and start with ¼ teaspoon and add more if you like.
    • Add Lemon Pepper Seasoning. If you love the flavor of lemon and pepper, add a teaspoon of lemon pepper to the spice rub.

    How to Bake Crispy Chicken Leg Quarters

    ♡So, let's cook!

    Process Photo 1 - A large rimmed baking pan is lined with aluminum foil.

    Preheat and Prepare. Preheat oven to 400°F/204°C and line a large rimmed baking sheet with aluminum foil. Use non-stick aluminum foil or lightly spray plain aluminum foil with non-stick cooking spray.

    Process Photo 2a - A small bowl contains paprika, salt, dark brown sugar, oregano, onion powder, and garlic powder to make a spice rub for the chicken.

    Make the Seasoning Mix. In a small bowl, mix together the paprika, onion powder, garlic powder, dark brown sugar, dried oregano, and fine sea salt. Set aside.

    Prepare the Chicken. Remove the chicken leg quarters from their packaging and dry the chicken well with a paper towel. Trim any excess fat and skin from the chicken with kitchen shears and remove any feathers that might still be on the chicken. Do not wash the chicken! Sprinkle and rub the seasoning mix over the entire surface of the chicken.

    Put Chicken in Prepared Pan. Place the seasoned chicken leg quarters in a single layer, skin side up, in the prepared pan, and sprinkle them with any remaining seasoning mix.

    Bake. Place the seasoned chicken in the preheated oven and bake for 45 to 50 minutes, depending on size. Check for doneness with an instant-read thermometer inserted into the thickest part of the thigh. Chicken is safe to eat at 165°F, but dark meat is often most tender between 175°F and 185°F.

    How Long to Bake Chicken Leg Quarters

    Chicken leg quarters bake at 400°F for about 45 to 50 minutes, depending on their size. The chicken is done when an instant-read thermometer inserted into the thickest part of the thigh reads 165°F.

    Should chicken leg quarters be covered when baking?

    Why isn't my chicken skin crispy?

    • 4 Teaspoons Paprika
    • 2 Teaspoons Onion Powder
    • 2 Teaspoons Garlic Powder

    Instructions

    • Prepare the Chicken. Remove the chicken leg quarters from their packaging and dry the chicken well with a paper towel. Trim any excess fat and skin from the chicken with kitchen shears and remove any feathers that might still be on the chicken. Do not wash the chicken! Sprinkle and rub the seasoning mix over the entire surface of the chicken.

    • Put Chicken in Prepared Pan. Place the seasoned chicken leg quarters in a single layer, skin side up, in the prepared pan, and sprinkle them with any remaining seasoning mix.
    • Bake. To cook the chicken, place it in the preheated oven and bake for 45 to 50 minutes. Check if it's done by using an instant-read thermometer to measure the internal temperature of the chicken, which should read 165°F/74°C. To ensure it's fully cooked, pierce the chicken with a fork and check that the juices run clear.
