Dry and Season Pork Chops. Dry the pork chops completely and season both sides of the chops with the seasoned salt, freshly ground pepper, and Italian herb seasoning.
4 Pork Loin Chops, 1 Teaspoon Seasoned Salt, ¼ Teaspoon Freshly Ground Black Pepper, 1 Teaspoon Italian Herb Seasoning
Brown Pork Chops. Heat the safflower oil in a large skillet over medium heat until shimmering. Add the seasoned pork chops and fry them on each side until lightly browned, about 2 minutes per side. Transfer the browned chops to a plate.
2 Tablespoons Safflower Oil
Layer Corn and Pork Chops. Spoon ⅔ of the corn mixture into a 13 x 9” baking dish. Layer the browned pork chops on top of the corn mixture and spoon the remaining corn mixture on top of the pork chops. Tuck sprigs of rosemary around the chops.
Fresh Rosemary Sprigs
Bake, Garnish, and Serve. Cover the baking dish with aluminum foil and bake for 1 hour, or until the creamed corn is hot and bubbling and the pork chops register at least 145°F in the center. Remove the dish from the oven and let the chops rest for 3 minutes before serving. Garnish with additional fresh sprigs of rosemary. Serve & enjoy!
Notes
My Top Tip♡ Pat the pork chops completely dry before seasoning. Surface moisture creates steam and prevents the chops from browning properly.Storage & Reheating InstructionsStorage: Store leftovers in an airtight, sealed container in the refrigerator for up to 3 days and in the freezer for up to 3 weeks.Reheating: Gently reheat in a skillet with a small amount of water over medium heat, or in the microwave in a microwave-safe container until heated through.
