Peel the tomatoes and cut each into 6 to 8 wedges.

Gently mix the cut tomatoes and cucumber in a large bowl.

Add olive oil, white balsamic vinegar, Dijon mustard, salt, and pepper to a small jar and shake the dressing vigorously.

Pour the dressing over the salad and, if desired, garnish with chopped fresh parsley.
