Midnight Diner Potato Salad


new potatoes yellow onion ham carrots sweet pickles miracle whip rice vinegar sugar

Scrub the potatoes well and boil them until they are barely tender.

Drain the potatoes and while they are still hot use a clean kitchen towel to help peel them.

As the potatoes cool, make the dressing by whisking together the Miracle Whip, rice vinegar, and sugar.

 Add sliced carrots, pieces of ham, and sweet pickle chips to the cooled potatoes and onions.

Fold in the dressing, cover and refrigerate until serving time.
