Preheat oven to 325°F. Line a rimmed baking sheet and place a roasting rack on it.
Remove roast from its package and dry it thoroughly with paper towels or a clean kitchen towel.
Sprinkle parchment paper with

Roll the roast in the salt and pepper so that all sides including the ends are covered in seasoning.
Place the roast
fat side up,
on a prepared roasting rack.
Place the roast in the oven and cook until the temperature of the meat reaches your desired doneness.
Remove the roast from the oven and cover it with aluminum foil. Let the meat rest for 15 minutes.
Carve and Serve.
Transfer the roast to a carving or cutting board, snip the ties, and carve the roast.
