Hearty Split Pea Soup with Bacon

Ingredients

• Dried Split Peas • Bacon • Red Onion • Celery • Fresh Garlic • Thyme, Cumin, and Bay Leaf • Chicken Bouillon • Water

Clean & Soak Split Peas.  Place the split peas in a colander, rinse well, and inspect for any stones or debris.

Cook Bacon. In a large Dutch Oven, cook the bacon over medium heat until crisp. Remove the bacon from the pot and save for later.

Add Split Peas, Cooked Bacon, Carrots, Bouillon, Water.  Add the remaining ingredients and stir welI.

Cover and Cook.  Bring to a simmer, cover, reduce heat, and cook on low for 1 hour. Stir well and continue to cook until the soup has thickened.
