Beautiful layered cocktail of light orange to dark red in a tall glass with crushed ice. Red and white striped straws are scattered in the foreground with a dish of peanuts.

Coconut Sunrise is a sweet and refreshing cocktail. Lightly alcoholic, it’s perfect for sipping on hot summer days and makes any brunch extra special.

Are you ready for something new to sip on this summer?  My Coconut Sunrise will surprise you with every sip.

I love layered cocktails like the Lava Flow and stacked drinks like the B-52.  So, I thought I would create my own lightly boozy drink that would have definite layers.  You might think making these types of drinks is hard, but I promise you it is not hard at all.

    Minty Kiss Hot Chocolate

Minty Kiss Hot Chocolate is smooth and creamy with just a kiss of Crème de Menthe.  It is a perfect after dinner drink!

Light Green Hot Chocolate with Mini Marshmallows and Crème de Menthe Drizzle.

Don’t you sometimes want just a little sweetness at the end of your meal?  My version of a mint hot chocolate is a little sweet with just a hint of mint.  I think to call this a cocktail is not exactly right, since it is mostly milk, cream, & egg.  But it does contain a very small amount of Crème de Menthe, just enough to give it a whisper of mint flavor and a lovely light green color.

    Recipe Notes

    •  Store Lillet and Peach Schnapps in the refrigerator, so they are always well chilled and ready to serve.
    •  If you prefer a stronger sweeter peach flavor, increase the peach schnapps to 2 oz.
    •  You can also use a tall glass and top with Sparkling Water for a lighter sip… or top with Prosecco for a true Bellini and a festive occasion!
